Let's Cook a Meal: Peanut Butter Rice Krispie Treats & Cravings

I was craving chocolate like no other earlier this week, so I decided to try this peanut butter Rice Krispie treat recipe sent to me from Kristen.  Although it became a bit sticky midway through (bless), this cake turned out really well and was delicious! In today's video, I also discuss how to manage cravings, what works for me and how to figure out when you should and maybe shouldn't give in to a craving :)

Ingredients:

7 tblspoons butter
7 cups marshmallows
7 cups Rice Krispie cereal
1/2 cup peanut butter
Bag of Peanut Butter Cups
1.5 cups chocolate chips

Directions:

1. Melt 4tblspoons of butter
2. Add in marshmallows and melt down with butter
3. Stir in peanut butter
4. Add mixture to Rice Krispie cereal and blend together
5. Place half of Rice Krispie mixture in a pan and pat down
6. Add a row of Peanut Butter Cups
7. Place the remaining Rice Krispie mixture on top and pat down
8. Heat up 3tblspoons of butter and the chocolate chips in the microwave (30-second increments; check and stir after each increment)
9. Frost the top of the cake
10. Chill in the refrigerator for about 30 minutes
11. Top with more chocolate chips and remaining Peanut Butter Cups
12. Enjoy! :)

Let's Cook a Meal: Mother's Day Mac and Cheese Muffins

Hi guys! I hope you all had a wonderful Mother's Day! 

On Sunday night, I attempted to make these mac and cheese muffins for the first time. During that attempt (haha), the muffins turned out way too crumby and hard. You guys shared some wonderful tips and advice for the recipe, which I applied during this video. Let me know what I could have done better, and let me know what you're cooking! :)

Ingredients:

1 cup of elbow pasta
Butter
Olive oil
Cheese
Bread crumbs
Ghee Spray (...or you can use chemicals, oil, butter, whatever to grease the pan.)
Salt
Pepper
Paprika
Milk

Directions:

1. Boil a pot of water with as much salt as "the effing Atlantic Ocean"
2. Put in pasta
3. Drain with a little bit of water left in the pan (Did I go wrong here?)
4. Add butter, cheese and milk
5. Stir
6. Add salt, pepper and paprika
7. Fill up the muffin tins 3/4 way with mac and cheese
5. Add a sprinkle of breadcrumbs
6. Top with olive oil
7. Cook at 375 for 20 minutes
8. Enjoy :)

Let's Cook a Meal: "Fancy" Grilled Cheese

I hope you guys are doing great and cooking delicious food :) In this video, I attempt to make a "fancy" grilled cheese, and here's what I did:

Ingredients:

1 onion
1 package of chicken
1 tube of BBQ sauce (Whatever flavor you like.)
Cheese
Bread
Butter
Ghee Spray (...or you can use chemicals, oil, butter, whatever to grease the pan.)

Directions:

1. Chop the onion
2. Put 1/2 of BBQ sauce in the bottom of a crockpot
3. Add the chicken
4. Put remaining BBQ sauce in, covering the chicken
Cook on high for 2-3 hours (Check it after two hours. The chicken should be easily "flaked"...I think that's the right word haha...with a fork.)
5. Melt butter for around 30 seconds in the microwave
6. Drizzle butter on one side of each slice of bread
7. Add cheese
8. Place Chicken in between cheese
9. Cook sandwich over medium heat (Around 2-3 minutes/side) until golden brown and not burnt like mine was!
10. Enjoy :)

Let's Cook a Meal: Gluten Free French Toast Breakfast Sandwich & Transitioning From Competitive Skating

This week, I'm getting in touch with my inner Suzy Homemaker by attempting to make a gluten free French toast breakfast sandwich...using a frozen hamburger bun. Bless. 

Questions regarding this meal: 

1. Do you have to technically use toast when you're making French toast? Or, does any bread product work?

2. How could I have made this meal more sweet and French toast-y?

3. What is the best liquid to use? (I used almond milk here.)

4. And, what are you cooking?

Comparing Energy Bars & A Resistance Band Workout

When I was struggling with bulimia and binge eating disorder, every day usually looked the same: I'd get up, have a very small breakfast and then rely on coffee to keep me going throughout the day. I'd try to go as long as possible without eating in order to make up for the binge that took place the night before. This inevitably led me to eat every single thing I could get my hands on every evening around 6 o'clock, leaving me bloated, full of self-loathing and depressed the next morning. 

Once I made the decision to recover, the number one tool that helped me--and I continue to use today--was making sure that I ate a few hundred calories every 2-3 hours. For years, I literally set a timer on my phone that would go off every three hours, and no matter where I was, I made sure that I put a few hundred calories of food in my mouth! I've found that by eating snacks and smaller meals throughout the day, I'm never too hungry and my blood sugar levels stay stable.

In this week's video, I compare a few nutrition bars--Clif Bars, Clif Builder's Protein, RX Bars and Lara Bars--that I have eaten every day for the past few years and give my take on what's great and not-so-great about these bars. 

Resistance Band Workout

1. Squats with medicine ball (I am using a 10lb ball here) 12 x 4
2. Side shuffles with oblique twists 12 x4 (shuffles per side); 16 x 4 (twists per side)
3. Side leg kicks with ball overhead 12 x 4
4. Hamstring kicks with  ball 12 x 4
5. 1-minute core x 4: 15 sec two feet; 15 sec on right foot; 15 sec two feet; 15 sec on left foot 

A Day of Eating Following The Only Diet That Works

I believe for longterm health and sanity, the only diet that works is listening to your body, giving it exactly what it wants—some days that may be salad, other days Doritos—and eating 100% intuitively. In this week’s video, I share a day of eating following the only diet I believe works. 

Protein Pancakes Recipe

1 banana
1 serving of protein powder of your choice
Egg whites (As many as you want)

1. Warm up a skillet over medium heat
2. In a blender, mash banana and blend the rest of the ingredients until it forms a milk-like consistency
3. Pour batter into skillet; this recipe should make about 3-4 pancakes
4. When the batter starts to bubble, flip the pancake

Paleo Cookies

Cookie Recipe:

1. Preheat your oven to 350
2. In a large bowl (or pot..haha), combine: 1 egg, 1 cup of almond or peanut butter, 1/3 CUP OF HONEY (!!), 1/4 cup of slivered almonds or peanuts, 1/4 cup of raisins or dates, 1/4 cup of coconut. 
3. Stir until everything is sufficiently combined
4. This should make about 11-12 cookies
5. Bake for 15 minutes
6. Enjoy! :)
